The Story Behind My Plant-Based Blueprints

Time and time again, I’m asked for new plant-based recipes by everyone who wants to eat more plants, but what they really want and need are meal ideas rather than “recipes”. The word “recipe” can be overwhelming; special ingredients, extra trips to the store, and a bunch of precise instructions that we just don’t have the time or patience for.

Most recipes include picture-perfect meals with exotic ingredients & complicated instructions that might leave you feeling overwhelmed.

I get it. A few years ago, I got too busy & impatient for recipes, I felt overwhelmed and what I needed was flexibility and options, not directions and instructions. So instead of following recipes, I started combining ingredients I liked with what I already had in my kitchen. I just estimated measurements & always made sure I had a balanced plate (ideally there were veggies, healthy fat, legumes & a complex carb in each meal).

I was able to easily make any meal without a recipe, without measuring anything, and with what I already had in my kitchen or with a quick grocery store stop. I knew this would be helpful for so many people that were also as impatient and overwhelmed with recipes as I was and this is how my Plant-Based Blueprints were born.

  • A recipe calls for specific ingredients, specific measurements, and specific steps to follow. The blueprints are a very laidback way to cook. You have lists of ingredients that you can choose from based on what you’re in the mood for or what you already have in the kitchen. You are given suggested servings, but you won’t even need to measure anything. In fact, all of the photos in this ebook are meals I prepared without measuring one thing. It’s all about knowing the best combination of ingredients to throw together and that’s what the blueprints tell you.

  • Within each blueprint, there are categories of suggested ingredients. You pick and choose any ingredients you’d like so there are endless combinations for each of the 11 blueprints.

  • There are suggested measurements offered and you can use them as a guide to estimate how much or how little you want of that particular ingredient in your dish. As I stated above, all of the photos in this ebook are meals I prepared without measuring one thing.   • The blueprints don’t require exotic ingredients or consist of a bunch of steps to follow. The idea is that aside from not following a recipe, you also don’t have to measure anything. Once you use the blueprints consistently you will have a list of your favorite go-to meals that you’ll be able to throw together in minutes.
